L&#039;histoire date l&#039;origine de la renomm\u00e9e de Gragnano en tant que patrie de la fabrication des p\u00e2tes au 12 juillet 1845, jour o\u00f9 le roi du royaume de Naples, Ferdinand II de Bourbon, lors d&#039;un d\u00e9jeuner accorda aux fabricants de Gragnano le grand privil\u00e8ge de fournir la Cour de toutes les p\u00e2tes longues. Depuis lors, Gragnano est devenue la ville de Macaroni.<\/p>\n\n\n\n<p>En r\u00e9alit\u00e9, la tradition de la fabrication des p\u00e2tes \u00e0 Gragnano a des origines tr\u00e8s lointaines, qui nous ram\u00e8nent \u00e0 l&#039;\u00e9poque romaine. D\u00e9j\u00e0 \u00e0 cette \u00e9poque dans la r\u00e9gion de Gragnano, le bl\u00e9 \u00e9tait moulu : les eaux du ruisseau Vernotico, qui coulait dans la Valle dei Mulini, actionnaient les lames qui moulaient les r\u00e9coltes arrivant par mer des colonies romaines. Les farines ainsi obtenues \u00e9taient ensuite transform\u00e9es en pain qui allait nourrir les villes voisines de Pomp\u00e9i, Herculanum et Stabies.<\/p>\n\n\n\n<p>Au fil du temps, le besoin pour les classes pauvres de disposer d&#039;un minimum de stocks alimentaires a donn\u00e9 naissance \u00e0 une nouvelle production, celle de p\u00e2tes s\u00e8ches, \u00e0 base de semoule de bl\u00e9 dur moulue dans la r\u00e9gion. Cette activit\u00e9 devint rapidement une tradition si importante et si profond\u00e9ment enracin\u00e9e qu&#039;au XVIe si\u00e8cle la guilde des &quot;vermicellari&quot; fut \u00e9tablie \u00e0 Naples et \u00e0 la m\u00eame p\u00e9riode un \u00e9dit du roi de Naples conf\u00e9ra la licence de vermicellaro \u00e0 un Gragnanais. Jusqu&#039;au XVIIe si\u00e8cle c&#039;\u00e9tait un aliment un peu r\u00e9pandu, mais suite \u00e0 la famine qui a frapp\u00e9 le royaume de Naples, il est devenu un aliment fondamental gr\u00e2ce \u00e0 ses qualit\u00e9s nutritionnelles et \u00e0 l&#039;invention qui a permis de produire des p\u00e2tes, appel\u00e9es or blanc, \u00e0 faible co\u00fbt par presser la p\u00e2te \u00e0 travers les matrices. Les sols id\u00e9aux pour permettre la production \u00e9taient Gragnano et Naples, gr\u00e2ce \u00e0 leur microclimat compos\u00e9 de vent, de soleil et d&#039;une bonne humidit\u00e9.<br>L&#039;industrie des p\u00e2tes a \u00e9t\u00e9 aid\u00e9e par trente moulins \u00e0 eau : quelques ruines peuvent \u00eatre admir\u00e9es dans la \u00ab Valle dei Mulini \u00bb. Pendant ce temps, le secteur de l&#039;industrie textile entre en crise et ferme d\u00e9finitivement en 1783 en raison d&#039;une mort de vers \u00e0 soie qui bloque la production de soie. Depuis lors, les habitants de Gragnano se sont consacr\u00e9s \u00e0 la &quot;fabrication de p\u00e2tes&quot;. L&#039;\u00e2ge d&#039;or des p\u00e2tes de Gragnano est le XIXe si\u00e8cle, ann\u00e9es au cours desquelles de grandes usines de p\u00e2tes non familiales ont vu le jour le long de la Via Roma et de la Piazza Trivione qui sont ainsi devenues le centre de Gragnano. Les fabriques de p\u00e2tes exposaient en effet des macaronis \u00e0 s\u00e9cher dans ces rues.<br>Au milieu du si\u00e8cle, la production atteint son apog\u00e9e : \u00e0 cette \u00e9poque les 75% de la population active travaillaient dans l&#039;industrie du macaroni, les usines de p\u00e2tes \u00e9taient plus d&#039;une centaine et produisaient plus de mille quintaux de p\u00e2tes par jour. Au fil des si\u00e8cles, les changements structurels et architecturaux de la ville vont de pair avec la production de p\u00e2tes s\u00e8ches. La Via Roma, symbole des Pasta di Gragnano, a \u00e9t\u00e9 remodel\u00e9e pour favoriser son exposition au soleil, devenant ainsi une sorte de s\u00e9choir naturel pour les p\u00e2tes. M\u00eame aujourd&#039;hui, il n&#039;est pas difficile de trouver des images d&#039;\u00e9poque montrant la route de couleur jaune vers les cannes de bambou plac\u00e9es sur des tr\u00e9teaux qui tenaient des vermicelles et des ziti mis \u00e0 s\u00e9cher.<\/p>\n\n\n\n<p>La production de \u00ab maccaroni \u00bb ne s&#039;est pas ralentie apr\u00e8s l&#039;Unification, bien au contraire. Apr\u00e8s 1861, les usines de p\u00e2tes de Gragnano s&#039;ouvrirent aux march\u00e9s de villes comme Turin, Florence et Milan. La production de p\u00e2tes atteint donc son apog\u00e9e. Gragnano obtient m\u00eame l&#039;ouverture d&#039;une gare ferroviaire pour l&#039;exportation des macaronis qui relie Gragnano \u00e0 Naples et donc \u00e0 tout le pays. Le 12 mai 1885, le roi Umberto I et son \u00e9pouse, la reine Margherita de Savoie \u00e9taient pr\u00e9sents \u00e0 l&#039;inauguration. Plus tard, les usines de p\u00e2tes ont \u00e9t\u00e9 modernis\u00e9es. L&#039;\u00e9lectricit\u00e9 est arriv\u00e9e et avec elle les machines modernes qui ont remplac\u00e9 les anciennes presses manuelles. Le vingti\u00e8me si\u00e8cle, cependant, a \u00e9t\u00e9 un si\u00e8cle difficile pour la ville de Pasta. Au XXe si\u00e8cle, la confrontation entre la production artisanale de Gragnano et l&#039;industrie naissante du nord a entra\u00een\u00e9 une diminution drastique des usines de p\u00e2tes de Gragnano. Ceux qui ont poursuivi leur activit\u00e9 se sont concentr\u00e9s sur la qualit\u00e9.<br>Les deux guerres mondiales provoquent une crise de la production des p\u00e2tes de Gragnano qui, dans l&#039;apr\u00e8s-guerre, doit faire face \u00e0 la concurrence des grandes usines de p\u00e2tes du nord de l&#039;Italie, qui disposent d&#039;un capital plus important. Le tremblement de terre de 1980 a aggrav\u00e9 la situation et r\u00e9duit le nombre d&#039;usines de p\u00e2tes \u00e0 seulement huit unit\u00e9s.
