Tart with Blackberry Jam

Many attribute the invention of the tart, as we know it today, to a nun from the convent of San Gregorio Armeno. It is said that the strips of shortcrust pastry on the surface of the cake are reminiscent of the grates used by cloistered nuns to attend religious services. Shortcrust pastry is one of the bases of pastry making. which gives softness and crumblyness to every sweet preparation. 
There blackberry jam is the main ingredient of this dessert. Blackberries, a summer fruit, give a natural sweetness and an unmistakable aroma. This jam, spread generously on the shortcrust pastry, gives the roll a sweet and juicy note, creating a symphony of flavors. The presence of blackberries also gives a touch of freshness to the dessert, making it even more inviting.

  • 500 g '00' flour' Caputo
  • 250 g Butter
  • 110 g Egg 2 Medium

Instructions for Shortcrust Pastry

  • Allow the butter to reach a lukewarm temperature before using it.
    Now begin the preparation: cut the butter into cubes and pour it into a bowl. Add the powdered sugar and work the mixture with your hands or a whisk until creamy. Then add the eggs. Mix well and don't worry if the mixture isn't too smooth.
  • At this point, pour in all the flour at once and knead with your hands, preferably cold ones.
  • Once the flour has been absorbed, transfer the mixture to a work surface and knead very quickly until smooth. Avoid overworking the dough to prevent the gluten from forming, and avoid overheating it.
  • Now you can shape the dough into a ball and wrap it in plastic wrap. Place the dough in the center of a long sheet of parchment paper and fold the ends toward the center, covering the pastry well.
  •  Then using a rolling pin, roll it out to the desired thickness 
    You can keep it like this in the refrigerator for at least an hour before using it.
