The NobiliRadici conservation philosophy
Food preservation has always been at the heart of the agri-food industry. Protecting food from decay is essential to reducing waste and enjoying the flavor of seasonal produce year-round. From Marzano Appio to all of Italy
NobiliRadici was founded in 2018 in Marzano Appio, a small town of about 350 inhabitants in the province of Caserta, on the outskirts of the Roccamonfina Regional Park. Every year, approximately 100,000 jars are produced here, made with fruit and raw materials grown locally, in a small-scale production environment that prioritizes artisanal care over large industrial volumes.
A plastic-free philosophy
From the very first jars, NobiliRadici has chosen to avoid using plastic in preserving its products, preferring glass for its entire line of jams, marmalades, sauces, and honey. This choice prioritizes sustainability and is accompanied by the absence of added preservatives, gelling agents, or pectins, allowing the fruit to express its natural flavor with the fewest ingredients possible.
Small batches, great care
Small-scale production allows for direct control over every stage of the process, from fruit selection to cooking and bottling. This approach results in a product that is less standardized than large-scale retail outlets, yet still reflects the seasonal characteristics of the raw materials used each time.
Local raw materials
Much of the fruit used by NobiliRadici comes from crops in and around Roccamonfina, a hilly area in the province of Caserta with a long agricultural tradition. The proximity between the growing site and the processing site reduces the time between harvest and processing, a factor that directly impacts the freshness of the finished product.
Simple recipes, few ingredients
The production philosophy emphasizes simplicity: fruit, sugar, and little else, without the added thickeners or acidity regulators often used in large-scale industrial production. This approach requires longer cooking times and a larger quantity of fruit per jar, but it yields a product with a flavor closer to that of the original fruit.
In the kitchen, beyond breakfast
In addition to the classic breakfast spread on bread or toast, these products are also well-suited to more versatile uses in the kitchen: as a base for tarts, a filling for leavened desserts, an accompaniment for fresh or aged cheeses, or as an ingredient in sweet and sour sauces to pair with white meats and game.
A small daily gesture
Choosing a product made by a small artisan, rather than a large-scale industrial production, also means supporting the economy of a small town and the continuity of a craft that requires time, manual care, and constant attention to every single jar.
