L'virgin olive oil is the oil obtained from the fruit of the olive tree only by mechanical or physical processes, using heat to facilitate its extraction in such quantities as not to cause alterations of the oil itself. The olives do not undergo any other treatment except washing, decanting, centrifugation and filtration. Therefore, oils obtained by extraction with chemical solvents or with adjuvants with chemical or biochemical action or with reesterification processes and any mixture with oils of other nature are excluded.
