
Turnip broccoli or turnip greens grown in Campania are called "friarielli", because they are fried in a pan with garlic, oil and chilli, thanks to their characteristic bitter taste and the unmistakable scent they give off, they represent the inevitable side dish for many winter dishes. , such as sausages, pork or provolone, fresh or grilled. They are cultivated all year round and throughout the region, even if the best ones are found on the market from late autumn to early spring; of friarielli, the most tender leaves are consumed, which, in recent years, have also been used as an ingredient for new recipes, such as rustic pizzas or special pasta sauces.
